Zucchini Boats – Easy Family Dinner

Zucchini boats make an extremely easy one dish family dinner. For a family of four, you can buy four or five medium sized zucchini, which will provide enough food for each person to have two boats. Plus, you might even have leftovers! 

My kids love zucchini, so I knew this meal would be a family favorite. However, even if you have picky eaters in your family, they are packed with so much flavor, they might not even notice they are eating zucchini!

What Are the Health Benefits of Zucchini?

Zucchini is an extremely healthy food. It is very low in carbohydrates which makes it a great food to eat when trying to eat a low-carb diet. Also, it can improve digestion and help with weight loss because it is so high in fiber. In addition to that, zucchini contains high levels of potassium and Vitamin C, and has been proven to aid with heart health and circulation. 

Zucchini Boats – Recipe

Ingredients

5 medium zucchinis, washed (I bought these from my local Super Target)

5 Medium zucchinis
5 Medium Zucchinis

1 lb ground turkey

1 small jar marinara sauce

1 lb Ground turkey and spaghetti sauce
Ground Turkey and Sauce

1 Tablespoon Italian seasoning

½ teaspoon garlic powder

salt and pepper, to taste

½ cup shredded Italian cheese

Directions

Preheat oven to 375 degrees

Cook ground turkey over medium high heat

Add Sauce and seasonings to ground turkey, and cook on low while preparing zucchini

Cut Zucchini into halves, lengthwise

With a spoon, scoop out inside of zucchini, and set zucchini meat aside

Spray large baking dish, and place hollowed zucchinis in dish

Using paper towels, ring out as much of the liquid from zucchini meat as possible

Roughly chop zucchini meat and then place in sauce and combine

Spoon prepared sauce into each zucchini boat

Sprinkle desired amount of cheese on each boat

Place aluminum foil over dish and bake for about 30 minutes

Take foil off and bake until cheese is a nice, golden color

Serve this meal by itself, with a salad, or even with a small amount of pasta on the side! If you are looking for a dessert to serve after this meal, serve my simple mini chocolate pies!
