Weeknight Turkey Chili

Weeknight turkey chili makes a wonderful meal for a busy family. After a long day, sitting down to a delicious bowl of chili is amazing. This turkey chili can either be made ahead of time, or about an hour before dinner is served. Also, it makes absolutely delicious leftovers. Whether it is served by itself or over a bed of lettuce as a salad, weeknight turkey chili is guaranteed to be a crowd pleaser! 

Growing up, one of my favorite meals was chili. The taste was always so comforting after a long day. Also, my mom was the queen of “hiding” vegetables in many of our dinners and chili was no exception. Because most of the vegetables take on the flavor of the chili, getting kids to eat a variety of vegetables is a breeze while they are eating this chili!

Another great thing about making this meal is that the spice level is easily adjusted. Making it solely for someone like my husband, it would be extremely spicy! However, making this weeknight turkey chili for my family, I usually tone down the spice level. 

In addition to being healthy, this recipe can be changed based on family preferences. Some families might want very mild chili with a lot of vegetables while others may want a simpler, yet spicy chili!

Weeknight Turkey Chili Recipe

Ingredients

1 onion

2 bell peppers

Yellow and Green Bell Peppers
Bell Peppers

1 lb ground turkey

4 cloves minced garlic

2 cups chicken stock

2 cans pinto chili beans (do not drain or rinse)

1 can drained and rinsed kidney beans

2 cans diced tomatoes (do not drain or rinse)

2 Tablespoons cumin

1 teaspoon paprika

2 teaspoons chili powder

1 Tablespoon oregano

1 teaspoon garlic powder

cayenne pepper to taste (I used 1/4 teaspoon)

1 Tablespoon sugar

pinch of black pepper

3 Tablespoons corn starch mixed with about 1/4 cup warm water

Directions

Chop onion and sauté in a couple tablespoons of olive oil in a large pot

Next, add ground turkey and cook until turkey is cooked through

Add chopped bell peppers to ground turkey and onion

Pour in chicken stock, tomatoes, beans and all spices

After that, cook on medium low heat for an hour

Simmer chili on the stove
Chili is cooking!

Finally, add in beans and corn starch mixture and cook for another 45 minutes

Serve with chips and sour cream and enjoy!

Ingredients

  • 1 lb ground turkey
  • 1 chopped onion
  • 4 cloves minced garlic
  • 2 bell peppers
  • 2 cups chicken stock
  • 2 cans diced tomatoes (do not drain)
  • 2 cans mild chili beans (do not drain or rinse)
  • 1 can kidney beans (drained and rinsed)
  • 1/4 teaspoon cayenne pepper
  • 2 Tablespoons cumin
  • 1 teaspoon paprika
  • 2 teaspoons chili powder
  • 1 Tablespoon oregano
  • 1 Tablespoon sugar
  • 1 teaspoon garlic powder
  • pinch black pepper
  • 3 Tablespoons corn starch mixed with 1/4 cup warm water

Instructions

  1. Sauté chopped onion in a couple Tablespoons olive oil in a large pot
  2. Cook ground turkey and minced garlic with sautéed onion
  3. Add bell peppers and cook for a couple minutes
  4. Add stock and tomatoes
  5. Next, add all spices
  6. Cook for about an hour
  7. Add beans and corn starch mixture and cook for another 45 minutes
  8. Serve with sour cream and a side of chips!
