Weeknight mini turkey meatloaves are the perfect family meal for those days when you want a comforting, yet healthy meal. These are made with ground turkey which contains less fat than ground beef, without compromising too much flavor. I also love these because you can add as much or as little of each spice that your family would like, and they will still turn out great!
Another great thing about mini turkey meatloaves is that they are made in muffin tins. This makes it super easy to ensure that each meatloaf is about the same size. This also makes them so easy to serve! For my kids, I usually give them each two of these weeknight mini turkey meatloaves, and that seems to be just enough!

Make-ahead meals are so nice for busy weeknights! The meatloaves and potatoes were made ahead of time. I had a couple of hours during the day while my kids were at school so I went ahead and prepared them, and then set them in the fridge. About an hour before dinner, I popped them in the oven, and we can a healthy, delicious dinner! Both of my kids had activities after school so cutting down on dinner prep time was much needed!
Weeknight Mini Turkey Meatloaves – Recipe
Ingredients
1 lb 93% ground turkey
1 onion, diced

2 teaspoons worcestershire sauce
1 large egg
1/2 teaspoon salt
pinch black pepper
2 1/2 tablespoons parsley
1/2 cup Italian style breadcrumbs

1/2 cup ketchup
3 Tablespoons worcestershire sauce (for topping)
Directions
Preheat oven to 375 degrees
Line 12 muffin tins with liners and spray with non-stick cooking spray
Sauté diced onion over medium high heat until golden brown, then set aside to cool
Place ground turkey in large bowl with egg, worcestershire sauce, bread crumbs, salt, pepper, and parsley

Mix well to combine all ingredients

Add cooled onions to ground turkey mixture and combine
Place large spoonful of turkey mixture into each muffin tin
Using the same bowl turkey was in, combine ketchup and 3 Tablespoons worcestershire sauce for topping
Spread ketchup mixture on each mini meatloaf
Sprinkle parsley on each meatloaf, if desired

Bake at 375 for about 40 minutes
Serve with roasted potatoes and green beans for a healthy and delicious meal! All ingredients were purchased at Trader Joe’s, and can be found in my recent haul.

Ingredients
- 1 lb 93% ground turkey
- 1 onion, diced

- 2 1/2 Tablespoons parsley
- 1/2 teaspoon salt
- Pinch black pepper
- 2 teaspoons worcestershire sauce
- 1/2 cup ketchup
- 3 Tablespoons worcestershire sauce (for topping)
Instructions
- Preheat oven to 375 degrees
- Line 12 muffin tins with liners and spray with non-stick cooking spray
- Sauté diced onion on medium hight heat until light golden brown and set aside to cool
- Combine ground turkey, salt, pepper, worcestershire sauce, parsley, egg, and breadcrumbs in large mixing bowl
- Add cooled onions, and combine well
- Place turkey mixture in muffin tins
- Combine ketchup with 3 Tablespoons Worcestershire sauce
- Spread ketchup mixture on muffins
- Sprinkle with parsley, if desired
- Bake at 375 for about 40 minutes
