Turkey stuffed peppers make a delicious and healthy family meal. Just prepare, refrigerate and pop them in the oven right before dinner time, easy as that! Another option would be to prepare and then freeze these stuffed peppers. If there’s a night that you know is going to be busy, just pull the stuffed peppers out of the freezer, thaw, and bake!
I also love any meal that can be tweaked to what my family likes. We absolutely love green bell peppers; however, red, yellow or orange bell peppers would be delicious too. Another thing you can change is to use all white meat ground turkey or ground beef instead of the ground turkey I used in this recipe. Also, substitute brown rice for the white rice, or add more or less of the other ingredients I used for this recipe. Just make sure to use the ingredients your family loves!
These turkey stuffed peppers are also so extremely healthy! I typically serve these to my family with a side salad, but the isn’t necessary. Because the main part of this meal is a bell pepper, I wouldn’t sweat it if you don’t happen to have the stuff for a side salad.
Turkey Stuffed Peppers – Recipe
Ingredients
3 large green bell peppers, washed and cut in half

1 lb ground turkey (I used 93 percent lean)
1/2 onion, chopped
3-4 cloves garlic
1 cup tomato sauce

1 Tablespoon chopped cilantro
2 teaspoons cumin
1/4 teaspoon cayenne pepper
1 1/2 cups chicken stock

salt and pepper, to taste
2 cups cooked white rice
1/4 cup shredded cheese
Directions
Preheat oven to 375 degrees
Spray large baking dish with non-stick cooking spray
Place halved green bell peppers in baking dish and set aside

Sauté chopped onions for 4-5 minutes
Add ground turkey and minced garlic and cook until turkey is cooked all the way through
Add cilantro, cumin, cayenne pepper, salt, and pepper and cook on medium heat for a couple minutes

Pour in tomato sauce and 1/2 cup chicken stock and heat all the way through
Add cooked white rice to turkey mixture

Spoon turkey and rice mixture into each bell pepper

Pour remaining 1 cup chicken stock into bottom of baking dish
Cover dish with aluminum foil and bake for about 30 minutes
Pull foil off, sprinkle cheese onto each bell pepper, and bake for another 5-10 minutes and serve!

- 2 cups cooked white rice
- 1/4 cup shredded cheese
Instructions
- Preheat oven to 375 degrees
