Slow cooker chicken tacos make the perfect weeknight meal. This meal has been a go-to in my family for years now. These tacos are extremely easy and full of flavor! The ease of using a slow cooker is amazing. Put your ingredients in it in the morning, and your meal is almost ready without much effort by dinner time!
Tacos are pretty much always a hit with my children. They love that they are able to personalize them to their taste by adding toppings of their choice! We have a taco night a couple times a month, and these slow cooker chicken tacos put a great spin on the “ordinary” taco. Don’t get me wrong, I still love a ground beef or ground turkey taco, but these chicken tacos are just so different and delicious!
Slow Cooker Chicken Tacos – Recipe
2 lbs boneless skinless chicken breasts
1 1/2 – 2 cups chunky salsa (I used mild)
2 packets taco seasoning
Juice from 1-2 limes
Spray slow cooker with non-stick cooking spray
Place chicken breasts in slow cooker
Pour salsa and taco seasoning on chicken breasts
Cook on low for 6-8 hours
Take chicken out of slow cooker and shred
Place back in slow cooker and add lime juice
When ready to serve, roughly chop some fresh cilantro for garnish
Serve with tomatoes, sour cream, cilantro and slices of lime!
These slow cooker chicken tacos are a great family dinner, but can also be wonderful when you are hosting a crowd of people. Just pop the chicken and other ingredients in the slow cooker in the morning and the slow cooker will do the rest! Your guests will never know these didn’t require hours of preparation! Serve these for dinner and a piece of banana pudding poke cake for dessert!

- 2 lbs boneless skinless chicken breasts
- 2 cups mild salsa
- 2 packets taco seasoning
- Juice from 1-2 limes
- Spray slow cooker with non-stick cooking spray
- Place chicken in slow cooker
- Pour salsa and taco seasoning over chicken
- Cook for 6-8 hours
- Take chicken out and shred
- Place chicken back in slow cooker with lime juice
- Serve on small tortillas with fresh cilantro, sour cream, and limes
