Simple mini chocolate pies are extremely easy and delicious. They only require a few ingredients, several of which you may already have on hand. I got everything to make these pies at my local Super Target. Make them for your family or bring them to a pot-luck or big family dinner. This recipe can easily be doubled.

In our house, we don’t have dessert after every meal. My kids have grown up to not expect that there will be a sweet treat after dinner. Do they ask for dessert most of the time? Yes. However, we really do try to limit desserts. Having said that, I do love making desserts that my family can enjoy occasionally. These simple mini chocolate pies will satisfy your sweet tooth while also not being too sweet. Also, my kids just love that they are so small! There’s just something about mini-food that appeals to most kids!
Simple Mini Chocolate Pies – Recipe
Ingredients
5.9 oz box instant chocolate pudding mix
2 cups low fat milk
1/2 container light cool whip
8 oz low fat cream cheese, softened

1 box Pillsbury refrigerated pie crust (or homemade)

Directions
Preheat oven to 375 degrees
Roll out both pie crusts and cut out large circles (about 3-4 inches)
Place pie crust circles in greased muffin tins
Bake crusts for about 12 mins or until golden brown

While crusts bake, mix together pudding and milk until combined

Add cream cheese and mix well
Fold in cool whip, and place mixture in refrigerator for about 30 mins

After crusts have cooled and chocolate mixture is set, spoon chocolate into each pie crust
Top with cool whip and chocolate chips, if desired


Serve these to your family after a delicious dinner, such as my stuffed peppers or mini meatloaves.

- 1/2 container light Cool Whip
- 2 cups low fat milk

Instructions
- Preheat oven to 375 degrees
- Roll out pie crusts and cut into 3-4 inch circles

- While those are baking, mix pudding mix with milk
- Add in softened cream cheese with pudding and mix well
- Fold in cool whip to combine
- Refrigerate for about 30 minutes while pie crusts cool
- Spoon in chocolate mixture into pie crusts
- Top with more cool whip and mini chocolate chips, if desired
