Two ingredient pumpkin spice muffins make the perfect breakfast. They can be enjoyed while sitting down with some coffee and a side of fruit in the morning. These muffins also make the perfect on-the-go morning breakfast while rushing out the door.
They are so quick and easy to make! In addition to being easy, the smell of the muffins cooking will fill your home making it smell so good! Also, one of the best parts about these pumpkin spice muffins is that they only require two ingredients! In this recipe, I use a box of spice cake mix and a can of pumpkin puree (not pumpkin pie filling). In addition to these two ingredients, I added semi-sweet chocolate chips and chopped walnuts, but you can add anything you and your family like! Some other good add-ins would be raisins, white chocolate chips, or chopped pecans.
Two Ingredient Pumpkin Muffin Recipe
Box of Spice Cake Mix
1 Cup of Your Favorite Add-ins
Preheat oven to 375 degrees
Pour Spice Cake Mix into medium mixing bowl
Empty can of pumpkin puree into bowl with cake mix
Stir to combine ingredients
Add walnuts and chocolate chips or any other add-ins and mix to combine
Spoon batter into greased muffin tins filling about 2/3 of the way
Bake at 375 degrees for 20-25 mins
The next time you are at the store, grab a can of pumpkin puree and a box of spice cake mix! Make these two ingredient pumpkin spice muffins for your family, and add their favorite nuts, chocolate chips or dried fruit such as raisins.
Also, in addition to being absolutely delicious as muffins, they can be frosted and served as cupcakes! My favorite frosting to use on these is cream cheese frosting. Yum!
