Recently, in my house, things have been a little hectic. Between several different sports and activities plus the school year winding down, we have been in survival mode. Even though things seem crazy, we still need to eat so there is nothing better than an easy meal! Also, you can add as many vegetables as you think your family would like.
We love the traditional onions, celery, and carrots. However, you can add other vegetables such as peas, corn or even a leafy green such as spinach!
When I think of sitting down to eat a bowl of homemade chicken noodle soup, the comforts of home come to mind. The flavor of the chicken and vegetables together in a nice warm broth is amazing and comforting.
Make Ahead of Time
Something I will do if I know there won’t be a lot of time for prepping dinner at night is to prepare the ingredients ahead of time. For this soup, the preparations would include chopping all vegetables and cooking and shredding chicken.
Another helpful hint is to go to your local grocery store and buy a rotisserie chicken! We have a Costco close by, and they sell pre-shredded rotisserie chicken white meat in the cold section. After discovering this, making soups with chicken in them got a lot easier!
Once everything is chopped, place ingredients in the fridge and store until dinner time. By doing this, making dinner will require very little time.
Chicken Noodle Soup Recipe
This chicken noodle soup recipe contains ingredients that are easy to find in the grocery store.
Ingredients

- 10 cups chicken broth
- 1 lb shredded boneless skinless chicken breasts (I bought the cooked and pre-shredded chicken breast from Costco)
- 2 Tablespoons butter
- 1 teaspoon dried thyme
- 2 cloves minced garlic
- 1 Tablespoon parsley
- 1 teaspoon dried oregano
- 2 bay leaves
- 1 cup chopped carrots
- 3/4 cup chopped celery
- 1 chopped onion
- pinch of black pepper
- 3 cups egg noodles (more or less to taste)




Directions
Sauté onions in butter in a large pot on medium high heat for a couple minutes

Add celery, carrots and minced garlic and cook for 5 minutes

Pour in chicken broth, spices, and shredded chicken and cook on low heat for about 30-45 minutes

Finally, turn heat up to medium high and add egg noodles cooking until noodles are cooked through (about 10-12 minutes)

Serve soup by itself, with a piece of warm bread, or a nice side salad. For dessert, try a delicious piece of banana pudding poke cake. This is the perfect sweet treat following a comforting bowl of soup.
