These grilled lemon chicken strips are full of flavor and extremely easy to prepare. This lemon marinade can be made ahead of time, and they only require a few minutes of cooking on the grill!
In my house, we use our grill several nights a week during the spring and summer. There’s just something amazing about the taste of grilled food during the warmer months. Another benefit is that we don’t have to use our oven and heat up the house!
If you plan on having people over this spring or summer, serve these chicken strips with a side salad and some roasted potatoes! That would be an extremely easy and crowd-pleasing meal! In addition to being delicious, these chicken strips are very healthy and serve as a good, lean protein.
How long do you cook chicken on the grill?
Chicken tends to dry out very quickly. I have had dry, over cooked chicken and many times in the past, and it just isn’t good. However, you definitely want to make sure you cook chicken all the way through. An easy way to know when your chicken is cooked through is by using a meat thermometer. It should reach a temperature of 165 degrees.
What do you eat lemon chicken with?
Lemon chicken can be served with a variety of side dishes. Some of my favorites are roasted garlic potatoes, sweet potatoes, and wild rice. These grilled lemon chicken strips would also be absolutely delicious served on a salad! And for dessert, serve a delicious granola fruit crisp!
Grilled Lemon Chicken Strips – Recipe
1.25 lbs Chicken Breast Strips
½ cup Olive Oil
2-3 Tablespoons Lemon Juice
3 Cloves Minced Garlic
3/4 teaspoon salt
Pinch of black pepper
1 Tablespoon Italian seasoning
1 teaspoon Oregano
1-2 Tablespoons fresh, chopped parsley
Mix all ingredients other than chicken strips in a large bowl
Add chicken strips to the mixture and combine to coat completely
Place plastic wrap over the bowl and set in fridge for a few hours to marinate
When ready to cook, heat grill to about 375-400 degrees
Cook chicken strips for just a few minutes on both sides, until they reach a temperature of 165 degrees
