Easy roasted garlic potatoes make the perfect side dish to so many meals. They are also so simple to prepare, and won’t dirty up too many dishes. That is a win in my house!
For this recipe, I love using small golden potatoes because my family loves the flavor, and they are extremely easy to cut up! In my last Trader Joe’s haul, you can see the potatoes I used for this recipe. However, you can really use whatever you have on hand.
These easy roasted garlic potatoes are not only good for a weeknight family dinner, but they also make an amazing side dish for a holiday such as Christmas or Easter. Last year, we had extended family and friends over for Easter dinner, and these potatoes were a hit! Because they are so simple and don’t cost a lot to make, they really do make the perfect side dish when hosting a crowd of people!
Easy Roasted Garlic Potatoes – Recipe
Ingredients
1 lb small yellow potatoes
2 Tablespoons olive oil
1 Tablespoon parsley
1-2 teaspoons salt
2 cloves minced garlic
1/2 teaspoon garlic powder
black pepper, to taste
Directions
Preheat oven to 375 degrees
Wash and dice potatoes into bite-sized pieces

Place potatoes in gallon sized plastic bag
Add garlic, olive oil, salt, parsley, garlic powder and pepper

Seal plastic bag and shake to coat all potatoes evenly

Spray baking sheet with non stick cooking spray
Evenly place potatoes on baking sheet and bake at 375 for about 40-45 mins, turning potatoes half way through

One of my favorite dinners to serve these potatoes with is my weeknight mini meatloaves. These two dishes are so delicious together! I also serve these with a side of steamed green beans. This makes the perfect weeknight meal, and it is extremely kid friendly!

- 1 lb small golden potatoes
- 2 cloves minced garlic

- 1-2 teaspoons salt
- black pepper, to taste
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 375 degrees
- Wash and dice potatoes into small bite-sized pieces
- Place potatoes into gallon plastic bag
- Add olive oil, garlic, garlic powder, parsley, salt, and pepper to the bag
- Seal bag and shake to completely coat potatoes
- Spray baking sheet with non-stick cooking spray
- Evenly spread potatoes on baking sheet and place in oven
- Bake for about 40-45 minutes, turning potatoes half way through
