Chicken vegetable pasta salad makes the perfect lunch or dinner. It is so easy, and packed full of flavor! Make a big bowl of this pasta salad, and store in the refrigerator. Also, you can this in your kids’ lunchboxes, eat it for a quick lunch on the weekend, or serve it to your family for dinner!
My favorite thing about a pasta salad is that you can make it your own. Use the vegetables your family loves the most. I typically use vegetables in a variety of color which makes the pasta salad so pretty! In addition to a variety of vegetables, you can add a protein such as chicken, ham, or pepperoni. We love chicken, and I cook with chicken all the time so that is what I used for this recipe. Also, I picked up some pre-cooked, pre-shredded rotisserie chicken at Costco. If you have a Costco close by, go get a pack of this! It is delicious and makes cooking a breeze!
Chicken Vegetable Pasta Salad – Recipe
Ingredients
1 lb small pasta (I used campanelle)

2 bell peppers, chopped

handful of small tomatoes, halved

1 lb cooked, shredded chicken
1 large or 2 small cucumbers, diced

1/2 finely chopped red onion
1/2 cup red wine vinegar
3/4 cup olive oil
1 teaspoon salt
1 Tablespoon sugar
1/2 teaspoon garlic powder
1 Tablespoon oregano
Directions
Cook pasta in salted water according the directions on package
Drain and slightly rinse pasta
Pour pasta into large bowl, and add cucumbers, peppers, tomatoes, onion, and chicken
Set aside pasta mixture
In medium bowl, mix olive oil, red wine vinegar, and spices
Pour olive oil mixture over pasta, chicken and veggies and mix well

Refrigerate until completely cooled or serve warm!

- Pinch black pepper
Instructions
- Cook pasta in salted water according to package directions
- Drain pasta, slightly rinse and pour in large bowl
- Add cut veggies and chicken to pasta
- In medium bowl, mix olive oil, vinegar, and spices
- Pour olive oil mixture over pasta, chicken and veggies
- Mix well to combine
- Refrigerate for 1 hour to cool or serve warm
