Baked Vegetable and Sausage Frittata

A baked vegetable and sausage frittata is such a wonderful one pan meal. Obviously, it is amazing as a breakfast dish, but it works well for other meals too such as brunch or dinner.

A few years back, my mom gave me a pan for Christmas that I fell in love with. After we opened up our gifts that morning, my mom and I decided to use the pan to make a frittata for everyone. We paired that with a fruit salad and some simple cinnamon rolls. The frittata turned out amazing! Ever since then, this has been one of my family’s favorite meals.

Frittatas are so easy, delicious and versatile! You can add just about any vegetable your family likes as well as your favorite cheese and breakfast meat. Bell peppers, onions, tomatoes, spinach and mushrooms are among the many different vegetables you can add to a frittata. We love bell peppers in my family, so those are always included. Also, turkey sausage makes the perfect breakfast meat for this frittata. To make this recipe even easier than it already is, I bought pre-cooked turkey sausage crumbles, and used about 2/3 of the bag. However, you can use regular sausage, bacon or even ham.

Baked Vegetable and Sausage Frittata – Recipe

Ingredients

A dozen eggs, scrambled and seasoned with salt and pepper to taste

1 lb 4 oz bag shredded hash browns

2 bell peppers, diced

2 small tomatoes, diced

1/2 onion, diced

6 oz turkey sausage crumbles

1/2 cup shredded cheese

Directions

Preheat oven to 375 degrees

Sauté onions with a couple tablespoons olive oil over medium high heat in a large, oven safe pan for just a few minutes

Add turkey sausage crumbles and cook for another few minutes

Remove onion and sausage mixture from pan and set aside

Add a couple more tablespoons olive oil to pan along with shredded hash browns and cook over medium high heat for about 7-8 minutes

Lightly press the hash browns into the pan and season with salt and pepper to taste

Add 9 of the scrambled eggs to the pan

After eggs are added, evenly distribute sausage and onion mixture along with diced peppers and tomatoes

Pour remaining eggs over the top

Bake for about 30 minutes or until eggs are cooked almost all the way through

Add cheese to the top (I only put cheese on half) and cook for an additional 10-15 minutes
