Baked Spinach and Turkey Italian Pasta

Baked spinach and turkey Italian pasta is such a delicious comfort food. This dish makes the perfect meal on those cold or rainy days. However, just because it is a comfort food, doesn’t mean it isn’t healthy. There are so many vitamins and nutrients packed into this dish!

Making pasta dishes, I typically add lots of veggies. When made with a good tomato sauce, even picky eaters won’t realize how many delicious and healthy vegetables are in the dish. You can add any vegetable you and your family enjoy such as spinach, tomatoes, onions, peppers, mushrooms, or zucchini. This time, I used onion, tomatoes, and an entire bag of baby spinach. 

Also, this baked spinach and turkey Italian pasta can be made using a different type of ground meat such as ground beef or Italian sausage. Another option would be to make it without meat and serve it as a vegetarian meal!

All of the ingredients used in this recipe were purchased at my local Super Target. However, most grocery stores should carry all of these ingredients.

Baked Spinach and Turkey Italian Pasta – Recipe

Ingredients

1 lb pasta (I used Penne)

1 lb box penne pasta
Penne pasta

1 can diced tomatoes

Jar favorite tomato sauce (I used Prego mushroom sauce)

1/2 chopped onion

1 bag baby spinach

1 lb ground turkey

1 lb ground turkey

Italian seasoning

salt and pepper to taste

3/4 cup mozzarella cheese

Sprinkle of Parmesan cheese

1 container parmasean cheese

Directions

Preheat oven to 375 degrees

Sauté onions in some olive oil for a few minutes on medium high heat

Add ground turkey, and cook through

Pour in tomatoes, sauce, salt, pepper, and Italian seasoning and simmer on low heat

While sauce is simmering, cook pasta in salted water for a minute or two less than directions on box (it will continue to cook while baking)

Right before pasta is done, add entire bag of spinach (it cooks down quickly!)

When pasta is done, drain and pour into sauce to combine

Sprinkle Parmesan and Mozzarella cheese on pasta and bake for about 30-45 minutes or until cheese is a nice golden brown color

Serve this dish alone or with a salad and some garlic bread, and mini chocolate pies for dessert. Yum!!
