Baked Blueberry Oatmeal Cup Recipe

This easy recipe has ingredients you are likely to find already in your party or fridge at home. They are also pretty inexpensive if you do need to run out to grab something you might not have on hand.

Ingredients

Dry Ingredients- Oats, Cinnamon, Baking Powder and Salt
Eggs, Milk, Brown Sugar, Vanilla, Butter and Maple Syrup

2 cups old fashioned oats

2 1/2 teaspoons cinnamon

1 teaspoon baking powder

1/2 teaspoon salt

1 Tablespoon melted butter

1 Tablespoon brown sugar

1/3 cup maple syrup

2 teaspoons vanilla extract

2 eggs

1 3//4 cups milk

1 1/2- 2 cups blueberries or fruit of choice

Directions

Preheat oven to 375 degrees and spray muffin tin with non-stick cooking spray.

In a medium bowl combine dry oats, salt, baking powder and cinnamon. Stir until all dry ingredients are combined.

Dry Ingredients

Once the dry ingredients are mixed well, add remaining ingredients (other than blueberries) and mix well.

Wet Ingredients Added to Dry Mixture

Finally, fold in the blueberries.

Adding the Blueberries

Evenly distribute oatmeal mixture into muffin tins.

Oatmeal Cups Ready to For Baking

Bake in preheated oven at 375 degrees for about 55 minutes or until oatmeal cups are fully cooked.

  3. Combine oats, salt, baking powder and cinnamon and stir
  4. Add eggs, vanilla, brown sugar, maple syrup, melted butter and milk until combined with dry ingredients
  5. Fold in blueberries
  6. Bake in preheated oven at 375 for about 55 minutes or until cups are cooked all the way through
