Andes Mint Brownies

Andes mint brownies are extremely easy and absolutely delicious! There is nothing better than a freshly baked brownie. Whether it is a snack after school or work, a dessert following dinner, or simply a weeknight craving, Andes mint brownies taste amazing!

Now, my family and I love brownies from a box. They are (obviously) super easy, and pretty much always turn out great! However, if you have a brownie recipe you just love, you can definitely use that to make these brownies. I do plan on trying some new homemade brownie recipes soon, and when I find one we love, I will definitely be sharing it on this blog!

So now let’s talk about the really fun part about these brownies: the Andes mints! You can really put just about any chocolate candy in a brownie. Reese’s peanut butter cups, Snickers bars, Junior Mints, and many others would be delicious!

If you want to avoid a chocolate mess, I will recommend waiting until the brownies cool down completely before eating them. However, if you are really craving something sweet and can’t wait for them to cool, just be sure to have plenty of napkins on hand! 

Andes Mint Brownies: Recipe

Ingredients:

Family Sized Brownie Mix (I used Pillsbury Chocolate Fudge Brownie Mix)

Brownie Mix

2 Eggs

2/3 Cups Oil

¼ Cup Water

25-30 Andes mints

Directions:

Preheat oven to 350 degrees

Spray 13×9 pan with non-stick cooking spray

Mix brownie mix, eggs, oil, and water until combined (don’t overmix)

Pour half brownie batter into pan

Place about 20 Andes mints on brownie batter

Pour rest of batter over mints

Place in oven for about 28 minutes

Let brownies cool for about 10-15 minutes

While brownies are cooling break apart remaining Andes mints into medium pieces

Place Andes pieces on brownies. They should melt slightly, but not completely

Let brownies cool completely before serving

Andes Mint Brownies are super easy to prepare. They are also delicious for a snack, dessert after dinner or even as a night time sweet treat!

Prep Time 10 minutes
Cook Time 28 minutes
Total Time 38 minutes

Ingredients

  • Family Sized Brownie Mix
  • 2 Eggs
  • 2/3 Cups Oil
  • ¼ Cup Water
  • 25-30 Andes mints
